Fairly quick and easy...
Need:
3-4 Chicken breasts, thawed - account for everyone in your family...if you're only going to eat 2, then only make 2 :)
1-2 Eggs
Bread crumbs - I used Progresso Italian Breadcrumbs, I suppose you could make your own if you were feeling ambitious
Mozzarella cheese
Spaghetti, rotini, or preferred pasta
Spaghetti sauce...again, I used canned - but that's up to you
Do:
Line a baking sheet with foil and put a large pot of salted water on to boil
Beat eggs in a shallow bowl.
Sprinkle bread crumbs in a second shallow bowl
Dip chicken into the egg and then roll in bread crumbs making sure they're thoroughly coated.
Place them on the baking sheet.
Cover the tops with cheese - I buy all of my cheese in a brick so I cut thin slices and lay them on top - if you buy shredded just sprinkle very generously.
Bake at 375 for 15-25 minutes depending on the thickness of the chicken - make sure it's cooked through
By now your water should be boiling. Dump in your pasta and stir. Begin to heat your sauce (stove top, microwave...whatever you want.) Drain your pasta when it has reached your preferred doneness (not sure that's a word.) Serve your cooked chicken over your pasta and ladle sauce on top. Enjoy!
